I haven’t been able to get the salad off my mind, and was able to score a copy of the slightly modified, Costco Cookbook recipe from my friend, Tina Biggers.

It was of course, made with a lot of love, so that probably didn’t hurt. But, I have no doubts that you will totally enjoy this salad for seasons to come, as will I.

Baby Mixed Greens with Apples, Pecans & Feta

Source: Costco Cookbook / Tina Biggers (Servings: 4)

• 3 tablespoon Olive Oil
• 1 tablespoon Red wine vinegar
• 3 tablespoon Orange juice
• 4 tablespoon Honey, more to taste if necessary
• Salt & Pepper, to taste
• 6 cups Baby mixed greens, loosley packed
• 1 medium Apple, or pear, cored and sliced into thin wedges
• ⅓ cups Dried cranberries, or pomegranate seeds
• ⅓ cup Feta Cheese
• 3 tablespoon Pecans, finely chopped

To prepare the dressing, combine olive oil, vinegar, orange juice, honey, salt and pepper in a salad bowl. Mix until well blended.
Add greens and toss to coat with the dressing.
Divide the salad among 4 plates. Top with apple or pear slices. Sprinkle with dried cranberries, feta and pecans.

The Greenhouse is fulfilling Kim Braniff’s passion for gardening and nurturing. Kim has never taken on such a venture before, but with the “full bloomed” (or full-blown) support both emotionally and physically from her husband Tom, they are open for business and looking mighty fine!

In Full Bloom has been a labor of love and definitely reflects that. As soon as you see it’s unique rustic storefront and meticulously constructed greenhouse and it’s amenities, you know that these folks are here to do business.

Just to start, they are carrying 40 to 45 varieties of flowers and then about 20 varieties of fruits and vegetables. There are multiple varieties of cucumbers and tomatoes and then an array of various other eatables such as peppers, cabbage, broccoli, cauliflower, eggplant, honeydew, cantaloupe, watermelon and more.

The Braniff’s have plans to add an outdoor garden to the business this summer and then will be able to offer fresh produce right from their doors. Eventually, even some herbs will be added to their medley of products.

In Full Bloom Greenhouse & Gardens is currently operating under a limited spring schedule, but hours will be added as summer approaches. Currently, it is open on Wednesday and Thursday’s from Noon to 7:00 PM. And, on Friday and Saturday’s from 8:00 AM to 6:00 PM.

With Kim’s desire to cater to the home gardener and provide the products that her community desires, I’m sure that everyone will be very pleased with this much needed business in the local community.

A large majority of plastic products contain bisphenol A or phthalates that have been proven to be an estrogen disruptor in our bodies. These chemicals are released when the plastics are heated and/or stressed. Numerous studies have shown links between BPA and cancer, diabetes, heart disease, and numerous other illnesses.

The study put even BPA-free plastics through three different types of stress tests. The plastics were filled with food mimicking elements and subjected to microwave heating, UV (Ultra-Violet) lighting and moist heat. The UV lighting was used to recreate the elements of exposure that a plastic container would have while in a hot car or a baby bottle would get from UV sterilization methods. The moist heat was a substitute for dishwasher exposure.

The results were not good at all! They were able to measure some type of estrogenic chemical leaching from approximately 95 percent of all the plastics tested, including 100 percent of the food wraps and 98 percent of plastic bags.

What does that mean to you and me? At this point in time, there are no safe plastics. It is far safer to stick with glass, stainless steel and other organic products. Going plastic-free is the best alternative for now. Not to say that there won’t be advancements in producing safe plastic products in the future, but until that time. plastic-free is the only option.

I shared last month about going plastic-free when the folks over at Rodale were having a Plastic Free February campaign. Please take the time to consider the options that you have and make use of them….every single day!

In a recent study that was published in the Journal of Clinical Endocrinology & Metabolism, a group of young, healthy, normal-weight adults were fed a typical fast food breakfast of egg muffin and sausage muffin sandwiches and two servings of hash browns. That’s a whopping 910 calories with 51 grams of fat (1/3 of that saturated), 88 grams of carbohydrate and 34 grams of protein!

The results from the study showed that after eating this meal, genes would be activated to create an inflammatory response which can alter insulin resistance. They also found interference with the leptin signaling pathway. Basically, that means that your brain doesn’t realize that you just ate 910 calories. Therefore, you will probably want to eat more. Sound familiar?

For the study, half the test group was given Shaklee’s resveratrol product known as Vivix prior to their meal, and the other half was given a placebo. The results showed that those who were given the Vivix, completely reversed the short term bad effects of the fast food meal.

The fact that it is an independent study is important. That means that Shaklee didn’t control the data. If, Vivix had turned out to be no better than placebo, those would have been the results that would have been published!

The study was completed by Dr. Paresh Dandona and his colleagues at the State University of New York at Buffalo and published in the Journal of Clinical Endocrinology & Metabolism (H. Ghanim et al, J. Clin. Endocrin. Metab., doi:10.1210/jc.2010-1812). It is currently available in online form and will appear in print in May 2011.

So what is the take home lesson for you?

Even if you don’t eat fast food meals you should know that oxidative damage, chronic inflammation and insulin resistance have many causes. You don’t need to eat a fast food meal to generate that kind of metabolic stress.

And it would be foolish to think that Vivix could undo all of the bad effects of fast foods. Vivix simply prevents that immediate effects of a fast food meal.

If you continue to eat fast foods on a regular basis you will pack on the pounds, plug your arteries, raise your blood pressure – the list goes on and on. But, to me the most important conclusion from this clinical study is that Vivix works.
